Taste in the center of São Paulo what beats strongest in the heart of a suspended Bahia. Terra Altar Season.
Since he began his career in gastronomy, the Paraiba chef Onildo Rocha, at the helm of Priceless Space, has sought out the story behind each ingredient he chooses for his menus. It's a careful job of talking to the producer and understanding everything behind that flavor.
When he took over Notiê por Priceless and Abaru por Priceless, Onildo made a point of continuing this practice. And he came up with the idea of making seasonal menus to highlight the importance of all Brazil's biodiversity for gastronomy.
”Brazil is quite rich, and we have to value what we produce.
Onildo Rocha, chef do Notiê por Priceless e do Abaru por Priceless
Each season, he chooses a region to be the menu theme and goes on a real expedition through it.
Because a country as large as Brazil can be seen and reviewed from different angles and, for the current season, Onildo chose the Chapada Diamantina, a group of elevated lands in the heart of Bahia.
It was nine days of deep diving in the Chapada Diamantina, where chef Onildo Rocha and his team were able to experience the stories of ordinary people who make their daily struggle a sacred moment. Because the sacred lives in the hands of Angelina, a cook who brings the food of her people from the Remanso Quilombo to her restaurant in Lençóis. It also lives in the bunches of grapes, the coffee and the red fruits that grow abundantly in the Northeast.
Presenting Brazil to Brazil. Transport Notiê by Priceless customers to the enchanted places of an inexhaustible country. This is Onildo Rocha's mission.
Chapada Diamantina
A typical Brazilian formation, it is characterized as a large, wide area that is higher in altitude, so that it stands out on the horizon. Highest altitudes in the Northeast.
