“I like to talk about Brazil experiencing the country.” So, chef Onildo Rocha summarizes his need to travel around the country before developing the menu for his restaurant, the Notiê. It’s essential for him to get to know the producers of the ingredients he brings to the dish, listen to their stories, find out how each ingredient was originally used and, thus, connect with the richness and potential of Brazil.

With this desire to go deeper into the real Brazil Onildo, with his armorial cuisine, makes each season of Priceless Space an expedition Now in the third season, Matas & Mares, the expedition was through the Atlantic Rainforest, the homage.
Traveling during ten days through the planet’s greatest biodiversity, which spreads out across 17 Brazilian states, ten cities were visited and ten producers mapped, from the Northeast to the South of the Country.

“We saw many people willing to preserve the biome. Producing with care, thinking about the future, something very beautiful to see,” says Onildo. Among them, Josefina Durini, who owns an agroecological farm in the interior of Rio de Janeiro, and Benedito Antonio Uczai, who produces honey from native stingless bees in Paraná.
“I met people who value organic produce, who know that their products are important for everyone’s health,” says the chef. It’s these products, and the stories of these people, that Onildo brought back from the Matas & Mares expedition and that you’ll get to know in this season of Notiê. Check it out!
